Sambar powder
Cook ½ cup of toor dal with a little turmeric until soft and mash well. Soak tamarind in warm water, extract the juice and keep aside. In a pan, boil chopped vegetables in the tamarind water along with salt and 2–3 tablespoons of Sambar Powder until the vegetables are tender. Add the mashed dal, mix well and simmer for a few minutes. Finally, season with mustard seeds, curry leaves and a pinch of hing fried in oil. Garnish with fresh coriander leaves and serve hot with rice, idly or dosa.

Add required water to adjust consistency and simmer for a few minutes. Finally, temper with mustard seeds, curry leaves, dry red chillies and a pinch of hing fried in ghee or oil. Garnish with fresh coriander leaves and serve hot with rice or enjoy as a warm soup.
